delicious recipe

Curried Yogurt Chicken

1 cup plain yogurt,
½ cup coconut milk
¼ cup fresh cilantro, ( I used 1/8 cup dried)
1 onion, finely chopped
1 clove garlic, crushed
1 Tablespoon lime juice
1 teaspoon finely grated lime rind
1 Tablespoon curry powder
Black pepper
2 lb chicken pieces

Combine all ingredients except chicken. Put chicken in a shallow glass dish and cover with mixture, making sure all pieces are covered. Cover dish with plastic wrap and let marinate for several hours or overnight in the refrigerator.

Remove chicken from marinade. Place chicken in shallow baking pan. Bake at 350 for 40-45 minutes.

I haven't fed it to my kids yet. I served it to some ladies for lunch and they all liked it.
It doesn't have a very strong curry flavor..

What you do is enter your recipe ingredients and it will tally up your calorie and vitamin content just like the food you buy at the grocery store. It also gives you a nutritional grade. I was so bummed that my favorite cookie recipe that I created came up as a C- nutritionally. BUT what was I expecting? An A for effort :) Actually anything that has sugar in its probably going to get low marks even if it has other healthy ingredients. I'm sure a similar cookie recipe made with full sugar and white flour would have gotten an F. I took my same recipe and replaced the butter with pumpkin and ended up with a B- if I recall correctly, BUT the pumpkin cookies just weren't as tasty. But I will shut up about cookies now because that is not what this blog is about...

I don't care much for cilantro, either. you can't taste it in the recipe, it just adds something. But it would be good even without it.
